I like to cook. I am willing to admit it. I even like to cook somewhat complicated things, but right now I am burnt out, tired of cooking. I need some fast, easy, and kid friendly dinners. Oh and did I mention that if they can be done 1 handed that would be awesome. Something about chasing a crazy toddler while cooking dinner, and then having it thrown (yes thrown) back at me just takes some of the magic out of cooking. Dont get me wrong, I still love it, but if cooking dinner could take 30 minutes from start to finish instead of... oh 2 hours I think that would be peachy keen lovely.
I want Mikey to experience real home cooked meals. You know the kind that require a pot and a pan and dont include precooked/packaged items like hot dogs. Yes those things have their place, and boy do they have their place some days for lunch, but for the most part I want him to experience food... actual food, the kind that starts out as individual raw ingredients and ends up as a delicious warm dinner, food that we (the parents) can eat with him because my days of ramen noodles, hot dogs, canned soup, etc for dinner ended when I graduated from college. Oh and if these meals could take 30 minutes to cook... oh wouldnt that be lovely.

Check out Mels Kitchen Cafe. Her recipes our awesome. Simple meals. I love the basil curry chicken dish. YUM. If your chicken is thawed the dish honestly came together in about 20 min. Total time. I loved it. Then those beef enchiladas...LOVED. Oh, man I think I will make those this week!!! Yeah, I learned real quickly, I cook for me. Not my kids. Yes, they get real food, but because they throw it I only cook what I want to eat!
Pesto Pasta! I do whole wheat pasta, and cut and fry little pieces of ham steaks (just using Pam). Then I add steamed broccoli, feta, and toasted pine nuts. Lastly, I apply pesto liberally. And for the adults at the table I have red pepper flakes on the table for an extra kick. It's so yummy and my kids LOVE it. And best of all, it's all done in less than 30 minutes!
I totally feel for you with the meals. I like cooking too, but when you're on for 3 meals every day, sometimes you just want simple.
Crock Pot. That is my advice. That is also pretty much how I cook everything these days. The easiest one that I do is to throw in frozen chicken, pour a jar of spaghetti sauce over it and let it cook. Then, serve it over spaghetti. But I have tons of other good ones that just require a bit more time and ingredients if you are interested.
I like skillet meals. Fresh and fast. Kraft.com has lots of them, with common ingredients. Also, I often make double batches of things and freeze half.
