ATK Wins Again

Yesterday I was searching for something delicious to make for dinner today and I stumbled across a recipe titled "slow cooker pork loin with sweet potatoes, orange, and cilantro". I think the recipe should actually be titled " Spicy Slow Cooker Chipotle Pork Loin with Sweet Potato Puree and Cilantro Lime Sour Cream", but since Christopher Kimball and I arent on a first name basis yet no one cares what I think. Anyway this recipe intrigued me. I am always trying to find something to make pork more exciting and less dry and disgusting, and I am still trying to master my slow cooker, so this sounded like the challenge for me. I made it and I have to say it was fabulous! I wish I had taken pictures but I forgot. Basically you cook a pork loin in the crock-pot with orange zest, orange juice, chicken broth, diced tomatoes, onions, jalapeno peppers, garlic, cumin, oregano, chipotle chilies, and sweet potatoes. You remove the roast and blend everything else together in the blender until you get a smooth puree. You serve the entire thing over rice (we prefer jasmine rice) and you top it with fresh cilantro sour cream. I thought it was a great, a new twist on a pork loin, nice and moist and very flavorful. The puree was delicious as a sauce and by itself... so yummy.

That sounds really good! I always love cilantro and I'm totally intrigued by sweet potatoes... I'd love the recipe since I have not yet invested in the ATK red bible. Maybe one day... :)

I really want the recipe, but I will not be including the cilantro in the sour cream. Other than that detail, it sounded divine. :)
