Why would you go for "low fat"?

I have a problem with gross mashed potatoes, well I actually have a problem with a lot of things but mashed potatoes are the focus of this post. Since mashed potatoes are often served at Thanksgiving I have been thinking about this a lot lately, I know it seems like I would have bigger fish to fry but I am avoiding my real life (not that it’s bad, but mashed potatoes are more exciting than behavioral theories). Okay so what makes mashed potatoes bad? Well let me tell you… skins make them less good but not bad, lumps are okay (you don’t want to whip them too much or they become gluey) but the one thing that makes them atrociously awful is “low fat”. If you are eating mashed potatoes you probably aren’t too concerned with health (at that particular moment in time). I mean come on you are eating whipped starch as opposed to lettuce, green beans or broccoli, so what is the point in “low fat”? Really mashed potatoes shouldn’t just be mashed potatoes, they should be potatoes, butter, salt, heavy cream, cream cheese, and sour cream (the full fat version). Why eat a gluey white blob when you can have fluffy, creamy, delicious potatoes? So think about it next time you decide to make mashed potatoes, and remember skim milk, margarine and “low fat” anything are not appropriate ingredients in good food (unless you actually happen so like that type of stuff in which case I am starting to questions your judgment on a variety of issues, I know you think I am kidding but I take cooking seriously), and if you ever happen to make your way to our house remember that the mashed potatoes probably have more calories than a big mac and fries (well not really but you get the idea). Really I understand that a high fat diet leads to a variety of health issues including: heart disease, cancer, stroke, and diabetes, I even understand that obesity is plaguing our nation, but at the same time I just cant go the low fat route on some things... I admire your courage if you can, but yeah those are just not for me.
*if you are a fan of "low fat" options and I have offended you I am sorry... yeah really I am sorry.

Okay Ashley, We have never met but I am Brian's cousin, Jim. I am sure you have met my wife and kids, but our paths have never met. I totally agree with your assessment of mash potatoes. If you are going to go for it, make it count. My Grandma Suker taught me how to make mash potatoes and I make them rich! Can’t wait to meet you some day.
