This past week I have been trying "easy" recipes. These aren't ATK, but they were fast, easy, and still pretty tasty.
The first recipe we tried was teriyaki chicken with mango pineapple salsa and jasmine rice.
I had seen something similar to this at Deals to Meals a couple of weeks ago, we used the basic idea but added and removed a few things to fit what we were looking for.
For the chicken: I brined two boneless skinless (aka flavorless and boring) chicken breasts in sugar and salt water for one hour prior to grilling, spinkled some salt and pepper on the brined chicken breasts, and brushed them with (can you believe it) teriyaki marinade. We grilled the chicken breasts on high, brushing with additional marinade each time the chicken was flipped.
For the salsa:
1 mango
1 can pineapple tidbets
1 green bell pepper (because that is what we had)
1 handful cilantro chopped
1/2 jalapeno pepper (with seeds) chopped
1/2 red onion minced
juice from 1 fresh lime
salt
Combine items, and serve on top of grilled chicken.
Sesame Noodles
I found the recipe for sesame noodles here. I love this blog, the photos are great, and the recipes are things that regular people eat. We added some thinly sliced chicken and zucchini to the noodles to take it from a yummy side dish to a full dinner. Next time I think we are going to add a little bit of sautéed bok choy, some bean sprouts, and maybe even some napa cabbage... you know for "nutritional value". Even plain these noodles are delicious and totally worth the 10 minutes it takes to make them!
Baked Lemon Pasta
We also tried a this recipe. I was looking for an easy side dish and this sounded perfect. It slightly resembles fettucini Alfredo, but tangy. I recommend it!
